What a beautiful week this has been! The last week of June and we have been blessed with sunny 70 degree days. We are all trying to soak in the unusual but perfect evenings. Last night, Mr. Schalk made awesome steak fajitas. I'm talking seriously good.
I sliced a red pepper and an onion and put it in a gallon bag with a piece of strip steak, a couple limes, their juice, Spice House fajita seasoning, and veg oil. I put it in there before work, and by dinnertime it was ready for the grill. It's a great recipe my sister, The Liz, gave us with a couple fajita skillets for a wedding shower gift. She is always the thoughtful sister! We love foodie gifts!
We usually make the fajitas in the cast iron skillet on the stove. However, this time Mr. Schalk had the brilliant idea of taking the cast iron skillet to the coal grill. Nice going man! It really amped up the flavors!
Don't the look great? Trust me, they were! For less than $5 a person, we ate in the lap of luxury.
Perfect weather for a deck dinner with my main squeeze. Hope you're enjoying your week, as well!
